As the Chef de Partie in Banquets, the care you devote to food and workspace preparation and collaboration with the culinary leadership team will result in the creation of truly spectacular fare that is the core culture of our Food and Beverage experience in making Fairmont Kea Lani a destination venue for our guests.  Hourly Rate:  $40.52What you will be doing: Ensuring high quality and consistency of food preparation (including mise en place preparation), proper cooking procedures and presentation as per Fairmont standardsEnsure that overall cleanliness and maintenance of our kitchen exceeds expectationsMaintain a clean workstation and minimize wasteResponding positively and in a timely manner to all internal and external guest requestsAnalyze food costs and develop recipes for all outletsWork in partnership with the Food and Beverage Leaders and Executive Steward to execute the smooth operation of the front and back of houseCheck service stations for necessary equipment and set up: ice, dishes, and utensils; replenish as neededHave full knowledge of all menu items, garnishes, contents and preparation methodsAct as a role model to junior staff members by maintaining a professional work ethic and displaying sound cooking skills
